Our Element IQ system's algorithms direct energy to where and when it's needed for optimal cooking performance. Innovative cavity design using sensors, PID temperature control and enhanced inverter technology – the system adjusts the heating elements present and the intensity of each to ensure your chosen pizza is cooked to perfection.
Conducted heat for primary coal control 
The independently controlled dynamic surface is designed to be mounted directly over responsive incoloy heating elements. Natural cordierite stone heats quickly and evenly to maintain the correct temperature, cooking the pizza base to your desired finish, with just the right amount of charcoal for a classic oven wood finish.
Radiant heat for a crispy crust pizza 
Intense radiant heat is evenly controlled by Sage's patented heating elements, so you no longer need to rotate food while cooking. Equivalent heat condensation reflectors increase the efficiency of overhead heating elements by reflecting energy back onto the shell. The integrated surface-to-door design brings pizza closer to the items and makes it easy to take in and out.
Convective heat of the baked layer 
For wood fired and Neapolitan style pizzas, the optimal reflective shield is designed to protect the crisp crust from intense heat while reflecting radiant heat back towards the crust to achieve a dappled effect in the crust. For other pizza styles, the dynamic turning of the inner element ensures that the toppings, cheese and dough are browned evenly.

Customization using manual mode 
Completely customize how your oven works. Manual mode allows you to individually control temperatures on the top and on the stovetop, and choose which heating elements you want to turn on. Choose the ideal heat configuration: Choose just “crust” for a speckled look on Neapolitan-style pizza or even heat for other pizza methods so the toppings, cheese and dough are browned evenly.
Heat retention and safe use 
The combination of a double-glazed heat-resistant front window and multi-material insulation surrounding the heat chamber ensures that maximum temperatures are retained within the oven cavity while keeping the external surfaces as cool as possible.
